How many of you hang their wild game to age it?  If so for how long? I hang my deer for 14 days and elk for 10. the best tasting and most tender game you will eat.

I hang my carp for two weeks.
Thats about right for carp. have you tried misting them with beer to keep the skin soft. the get a nice aroma and are about right if you go 3 weeks. melt in your mouth!!

as a meat cutter and a seriouse hunter i have tested this a bit. we found that hanging deer and elk, along with sheep hogs ect, 7 days is the max. the meat dont break down any more after 7 days. any longer u will just be wasting good meat

JP, do you hang em in or out of the hide?  I like in the hide as the epidermis does't dry out as much.  Daddy always said "You got to know the difference between ageun and rottun" so we normally hang em for 7 days.  By the way ageun and rottun is Southern for ageing and rotting.
